About Noa

Hidden beneath the iconic Beurs van Berlage, in what was once a bicycle cellar, a completely new nightlife experience will open this autumn in the heart of Amsterdam: Noa. An exclusive restaurant-bar-club where music, atmosphere, gastronomy, and design come together.Noa is located in a stunning space with no fewer than 23 monumental arches, a historic location where even the King and Queen were married. During dinner, we serve refined Japanese bites, prepared by you, our culinary sushi chef. Later in the evening, we effortlessly transition into a vibe of late-night drinks, great artists, and dancing until the early hours (on weekends).

Job requirements

The role
We’re looking for a motivated and eager-to-learn Sushi Chef with at least 3 years of experience in preparing high-end sushi. What we value most is talent and curiosity — we’ll provide the opportunity for you to grow both in your culinary and leadership skills.

Training will be provided by none other than Chef Ken from Ken Sushi, a well-known name in the Amsterdam sushi scene. As Chef at Noa, you will be (jointly) responsible for designing and preparing high-quality Japanese sushi and bites that perfectly match the ambiance and concept of the venue. You know how to inspire your kitchen team, and together you’ll ensure every guest is wowed by flavor, quality, and presentation.

Noa is set to open in October 2025, but we’re looking for someone who can start earlier. You’ll have the chance to begin training with Chef Ken before the official opening, so you’re fully prepared by the time we welcome our first guests. Naturally, this also means you can join The Seafood Bar team under contract ahead of time.

What you’ll do

  • Prepare sushi with care and precision, following the highest quality standards

  • Work with fresh, top-quality ingredients

  • Collaborate with the management team to develop new dishes that fit Noa’s concept

  • Maintain a clean, organized, and efficient kitchen

  • Lead, coach, and train your colleagues when needed

What we’re looking for

  • A minimum of 3 years of experience preparing high-quality sushi as an Independent Chef or Sous Chef

  • A deep passion for Japanese cuisine

  • Experience in a high-end or fine dining hospitality setting

  • Attention to detail and a drive for excellence in both flavor and presentation

  • A positive, curious attitude and willingness to keep developing

  • Fluent in English; Dutch is a plus

  • Available from around August 1st, 2025 for training and preparations ahead of Noa’s opening
