About Noa
Hidden beneath the iconic Beurs van Berlage, in what was once a bicycle cellar, a completely new nightlife experience will open this autumn in the heart of Amsterdam: Noa. An exclusive restaurant-bar-club where music, atmosphere, gastronomy, and design come together.Noa is located in a stunning space with no fewer than 23 monumental arches, a historic location where even the King and Queen were married. During dinner, we serve refined Japanese bites, prepared by you, our culinary sushi chef. Later in the evening, we effortlessly transition into a vibe of late-night drinks, great artists, and dancing until the early hours (on weekends).
The Role
We’re looking for a passionate and ambitious Sushi Sous Chef with at least 2 years of experience preparing high-end sushi in a leadership role. Your training will be provided by none other than Chef Ken from Ken Sushi, a well-known name in Amsterdam’s sushi scene.
As the Sushi Sous Chef at House of Noa, you’ll be jointly responsible for creating and preparing refined Japanese sushi and bites that perfectly match the style and atmosphere of our new concept. You’ll inspire your kitchen team, and together with the Head Chef, ensure that every guest is amazed by flavour, quality, and presentation.
Noa opens at the end of December, but you can start earlier with training from Chef Ken, so you’ll be fully prepared for the opening. This also means you can join The Seafood Bar Group ahead of time.
What You Will Do
You support the preparation of sushi and other Japanese dishes according to high quality standards
You work with fresh ingredients and learn under the guidance of experienced chefs
You help with service preparation and ensure a clean and organized workspace
You contribute to a positive and professional atmosphere in the kitchen team
What We Are Looking For
At least 3 years of experience preparing high-quality sushi as an independent cook or Sous Chef
A strong passion for Japanese cuisine
Experience in a fine dining or upscale hospitality environment
Precision and attention to detail — both in flavour and presentation
A curious, eager-to-learn attitude and a drive to develop your skills further
Fluent in English (Dutch is a plus)
Available from around December 1st for training and pre-opening preparations

A fixed monthly salary between €3000 and €3300 depending on your experience and skills
