As Head Chef, you are fully responsible for the kitchen at Noa. You combine refined Japanese techniques with the pace and energy of a high-end evening concept.
You safeguard the quality of our temaki handrolls, sashimi, oysters, wagyu tataki, black cod miso and other signature dishes, while ensuring the kitchen performs flawlessly during peak hours as the restaurant transitions into nightlife.
This is not a traditional restaurant position. This is gastronomy within a dynamic night-driven concept.
About Noa
Hidden beneath the iconic Beurs van Berlage, in what was once a bicycle cellar, a completely new nightlife experience will open this autumn in the heart of Amsterdam: Noa. An exclusive restaurant-bar-club where music, atmosphere, gastronomy, and design come together.Noa is located in a stunning space with no fewer than 23 monumental arches, a historic location where even the King and Queen were married. During dinner, we serve refined Japanese bites, prepared by you, our culinary sushi chef. Later in the evening, we effortlessly transition into a vibe of late-night drinks, great artists, and dancing until the early hours (on weekends).

Responsibilities:
Full responsibility for quality, presentation and consistency of the menu
Leading, training and inspiring the kitchen team
Establishing kitchen processes for both dinner and late-night service
Contributing to menu development and seasonal adjustments
Cost control, purchasing and supplier management
Close collaboration with operations and bar to deliver a seamless guest experience
Ensuring HACCP compliance and operational standards
Who are you?
Experience as a Head Chef or strong Sous Chef within a high-end concept
Affinity with Japanese cuisine (sushi/temaki experience is a strong plus)
Experience working with premium products such as wagyu, seafood and caviar
You understand speed without compromising quality
A natural leader who brings structure and calm during peak service
You have at least 8 years of experience in a kitchen management position
You have a passion for seafood and knowledge of this product
You have strong communication skills.
You live in Amsterdam or the surrounding area
